Peanut butter blondies are a one-pan easy to make bar cookie loaded with peanut butter, peanut butter chips and crunchy chopped peanuts and maybe some candy corn if candy corn is the song of your heart.
I’ve been thinking about peanut butter blondies for a while now, and while it took me a couple cracks to get this recipe right, it’s safe to say I can’t be trusted around these bars. As a warning, please make them when you have other people you can share them with lest you eat an inappropriate serving your own self.
And what’s not to love. It’s like a peanut butter cookie in easier to make bar form. They take 30 minutes from start to finish. It’s hard to hate on a cookie that’s so easy.
And just like all my other bar cookies, be on the lookout for fun things you can add to them as mix-ins. Butterfingers, chick-o-stick, Snickers or Mr. Goodbar would all be awesome here, but any kind of peanutty kind of candy is made for stirring into these bars. In honor of my Mom, who loves her some candy corn and peanuts, I made a candy corn version too. Mom LOVED them!

Why you’ll love peanut butter blondies

- Mix ins: I will never ever tire of mixing fun things into bar cookies. I actually can’t wait to chop up some butterfingers for a new batch of these. Literally any chocolate would be good here, but anything with chocolate and caramel and or peanuts will be especially good.


Ingredients for peanut butter blondies
- Butter
- Peanut butter
- Light brown sugar
- Egg
- Vanilla paste
- All-purpose flour
- Baking soda
- Salt
- Salted peanuts
- Peanut butter chips (or Toll House Chocolate and Peanut Butter chips)
Tips for making the best blondies
- Cool the batter, if you have time: I usually let the batter cool down just a little before I stir the mix-ins in–maybe 5-10 minutes. This gives the flour a chance to absorb the liquid and keeps the mix-ins from potentially melting before you put them in the oven. If you don’t have time, don’t worry about this.
- Use a parchment sling: ALWAYS use a parchment sling when you bake bar cookies. That little piece of parchment running up the long sides and bottom of your pan lets you easily get your bars out of the pan. Nobody likes digging out bars from a pan. Just use the parchment!
- Cool bars completely before cutting: Bars are always better if you let them cool completely before cutting them.
How to mix up your blondies
- Halloween blondies: for non-scary Halloween blondies, stir in candy corn into the batter. Save some candy corn for the top, and then glue it on with some quick royal icing (see note for recipe).
- Change your mixins: chopped chocolate, chopped Twix, Butterfingers, or just about any chocolate candy would be good here. Also candied nuts like my chai maple candied pecans would be great.

Description
These are easy one pan blondies with the nutty goodness of peanut butter. Use your imagination and stir your favorite mix-ins. Butterfingers, candy corn, Twix, or pretty much any chocolate Halloween candy is a perfect match for these too good bars.
Ingredients
- 1 stick butter (113 g)
- 1/2 cup peanut butter (128 g)
- 2/3 cup brown sugar (140 g)
- 1 large egg
- 1 teaspoon vanilla paste
- 1 cup all-purpose flour (130 g)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chopped salted peanuts
- 1/2 cup peanut butter chips (or Toll House Chocolate and Peanut Butter chips)
Instructions
- Preheat the oven to 350F (180 C).
- Lightly spray an 8″x8″ pan with cooking spray, and then cut a piece of parchment to line the bottom and sides of one side. Spray over the top of this piece of parchment, then cut another one to go across the remaining 2 sides of the pan.
- Melt the butter and peanut butter in a small pan just until the butter is completely melted and the peanut butter is extra smooth.
Turn off the heat, and then mix in the brown sugar, egg and vanilla paste.
- When this mixture is smooth, sprinkle over the flour, baking soda and salt, and then mix until smooth.
- Save a handful of the peanuts and the peanut butter chips. Fold in the rest of the peanut butter chips and peanuts.
- Scrape the batter into the pan, and then scatter the remaining peanuts and peanut butter chips over the top of the bars.
- Bake for 22-25 minutes until the edges are starting to brown and a toothpick inserted into the center of the bars comes out clean.
- Cool the bars in the pan for about 10 minutes. After 10 minutes, pull on the sides of the parchment to lift the bars onto a wire rack to finish cooling completely. When cool, cut into 16 pieces.
- Bars are best the day they are made, but you can store leftovers in the fridge for up to 3 days. You can also freeze the bars in a plastic bag for up to 2 months.
Notes
Halloween Blondies: for a pumpkin time variation, add 1/2 teaspoon of pumpkin pie spice. Skip the peanut butter chips and replace them with ½ cup of candy corn, then save 16 pieces to go on top.
Mix up a quick royal icing with 1/2 cup powdered sugar, 1 and 1/2 teaspoons meringue powder, and 1 and 1/2 teaspoons of water with a hand mixer. Fill a plastic bag with the icing, clip the corner, and squeeze lines of icing all across the top. Set the reserved candy corn across the top (1 piece for each serving). If the icing dries too quickly, squeeze a little extra where you want it to adhere it in place.
