Description
Make quick little tarts with puff pastry and simply spiced apple slices that are best eaten without ceremony standing in your kitchen maybe with a little ice cream.

- 1/3 recipe of homemade puff pastry or thawed frozen all-butter puff pastry like Dufour (about 1 pound)
- 3 medium apples
- 1/4 cup granulated sugar (50 g)
- 1 teaspoon ground cinnamon or apple pie spice
- 1 teaspoon spiced rum (optional)
- 1 tablespoon apricot jam or apple jelly
Instructions
- Preheat the oven to 400 F (205 C). Line 2 sheet trays with parchment paper.
- Peel the apples and slice them into very thin slices.
- Roll out the puff pastry on a lightly floured surface into a rectangle that is about 1/8” thick.
- Cut out pieces that are about 3 ½” square either using a pizza wheel or square cookie cutters.

- Place the squares of pastry on the prepared cookie sheets. You should get about 16 squares. Don’t worry if the squares shrink up a little bit when you put them on the sheets.
- Pour the cinnamon, sugar, and rum (if using) over the apples and quickly toss them until coated.

- Place apple slices on top of the pastry, overlapping the apples on each other.

- Bake the tarts for about 20 minutes until the pastry is puffed and crisp, and slightly brown on the bottom.

- While the tarts are baking, warm the jam in the microwave just until it is liquid. Brush the jam on top of the apples right when they come out of the oven for a little added shine.
- Tarts are best eaten as soon as they’re made, but you can keep them at room temperature for up to 2 days.
