Description
The classic mix and go Texas Sheet Cake which has been a potluck staple for forever gets a less-sugar makeover without sacrificing any of the moist tender texture.
Ingredients
Cooking spray for the pan
Texas Sheet Cake Batter
- 2 sticks butter (227 g)
- 1 cup water (236 mL)
- 1/2 cup milk (118 mL)
- 4 Tablespoons cocoa powder (20 g)
- 2 cups all-purpose flour (260 g)
- 1 and 1/2 cups granulated sugar (300 g)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla paste or vanilla extract
Crackly Chocolate Glaze
- 1/3 cup half and half (78 mL)
- 6 Tablespoons butter (85 g)
- 2/3 cup granulated sugar (132 g)
- 1 cup chocolate chips (170 g)

Instructions
Prep the Pan
- Spritz a 9×13 pan with a little cooking spray, and then line the bottom of the pan with a piece of parchment .
Melt the Butter
- Melt the butter with the water, milk, and cocoa.

- Once the water boils, whisk out any lumps in the cocoa and butter until smooth.
Mix the Dry Ingredients
- Stir together the sugar, flour, baking soda, and salt together in a small bowl. Adding the sugar with the flour will keep the flour from getting lumpy in the cake batter.
- Add the dry ingredients into the hot buttery cocoa water and stir until everything is moistened.

Finish the Batter
- Crack the eggs into a small bowl and break them up with a fork.
- Add the eggs and vanilla to the batter and stir just long enough for all the flour to disappear and to create a smooth batter.

Bake the Cake
- Scrape the batter into the prepared pan.

- Bake for 28-30 minutes for a 9×13 pan, about 18-22 minutes for a half sheet pan and about 15-20 minutes for a jelly roll pan.
- While the cake is making, make the glaze.
Make the Glaze
- Bring the sugar, half and half, and butter to a boil in a small pan over medium heat.
- Whisk everything once the mixture starts boiling, and then let it boil for 1 minute.
- Turn the heat off and add in the chocolate chips.
- Stir periodically until the chocolate melts and the glaze is smooth.
Finish the Cake
- Let the glaze cool until warm and then pour it over the top of the cake.
- Top the cake with sprinkles if you’d like.
- Cut the cake into 15 pieces (or more) for serving.
Notes
For even less sweet cake: Skip the chocolate glaze and top it with Thick Ganache or Ermine Frosting.
Mocha Texas Sheet Cake: Use fresh brewed coffee (or 1 teaspoon of instant espresso added to the water) in place of the water. The coffee will boost the flavor of the chocolate without tasting like a coffee-flavored cake.
Spiced Texas Sheet Cake: Add in 1 teaspoon of cinnamon or pumpkin pie spice for a lightly spiced cake. The sweet spice will again boost the flavor of the chocolate without tasting like gingerbread.
Dairy free Texas sheet cake: For dairy-free Texas sheet cake, use coconut milk and coconut oil in place of the milk and the butter. Also use coconut milk in the glaze.
